I love breakfast. But, I don’t think my kids have got the memo just yet.
By the time the eighteen month old has been fed and clothed (and her hair isn’t too knotty), and the 4 month old has been fed and had a nappy change, and the husband has had his brekky and lunch organised (the harder he works, the less I have to), and the washing is done, and the kitchen is clean, (and I’ve attended to the other 15 chores that needed doing), it’s usually about morning tea time. I just forget. Same as my phone – always forgetting my phone. I keep telling people, my phone is not going to feed or change my babies! My breakfast comes under much the same category.
I used to eat oat porridge or my homemade fermented bread. But I am in a habit now – I live on coffee! And all that milk, not to mention the caffeine, cannot be good for me.
So, thinking about how I can incorporate lupins into our life more, I thought: overnight oats! with lupins!
My daughter loved it, I loved it, my husband still loves his morning smoothie more (but that’s another story). So it became a regular in our household.
I mixed together some almond milk, oats, lupin kibble, mashed banana and rice malt syrup and whacked it in the fridge. It was that easy. It took no time at all.
Morning came. I topped the oats with some fresh banana, blueberries and some crunchy granola. Sat down at the kiddy table with my 4 month old on my lap and my eighteen month old sharing my overnight oats. It was a hit, and it was that easy. And it kept me going for ages!
But, this just keeps getting better. You can add whatever toppings you like to it – use fruit that is in season! It’ll be fresher and taste better! Add nuts and seeds. Yoghurt. Granola. Anything.
Better still – put it in a container and take it to work with you if you don’t get time to eat at home. Have it for morning tea.
It is that easy and the lupins will keep busy people going for longer!
Blueberry and Banana Overnight Lupin Oats
Serves 2 (plus a little extra)
1/2 cup oats
2 tbsp lupin kibble
1 cup almond milk
1 mashed banana
1 tbsp rice malt syrup
Combine all ingredients, cover and place in the refrigerator overnight.
Add fresh fruit, greek yoghurt and crunchy lupin granola.
