Serves 2
1 large beetroot, peeled and diced (1.5cm cubes)
1 tsp cinnamon
1 tbsp olive oil
8 broccoli florets, halved
½ cup lupin kibble
approx 30g goat’s cheese.
2 tbsp hazelnuts
olive oil to drizzle
Pre-heat oven at 180 degrees celsius.
Peel and dice the beetroot and wrap in foil with cinnamon and olive oil. Bake for 40 minutes.
Steam broccoli in microwave with 2 tbsp of water for 1 minute on high.
Bring 2 cups of water to the boil and add ½ cup of kibble. Cook for 3 minutes, drain excess water.
Add baby spinach to serving plates.
Top with kibble.
Top with broccoli and beetroot.
Top with goat’s cheese and hazelnuts.
Drizzle with olive oil.
