Everywhere we turn, there’s an allergy. As a kid, I feel like it was rare for people to have allergies. But now they’re popping up everywhere – my 88 year old grandmother has just been diagnosed with an allergy to peanuts (which she’s been eating forever). Consequently, I’ve starting making some staples to try to cater for all of these oddities, which is kind of ironic because lupins are an allergen!
Anyway, gluten free crackers at the supermarket cost a fortune, and taste like cardboard. Sakatas are a much cheaper biscuit. But if you really want to up the ante, try these babies out! Super easy! Super quick! Super healthy! And full of flavour!
What’s even better, is you can change the flavour. Add dried fruit, nuts, different spices. Just remember, the chia seed is what binds them, the more stuff you add, the more chia seeds you’ll need.
It’s as simple as throwing your ingredients in a bowl, let the chia seeds and water do their thing, and whack it on a tray in the oven. You do have to take them out and cut them and recook them, but this is mainly to dry them out to get a bit of a longer shelf life with them. Doesn’t take long.
What’s great, is you end up with crackers that have “all the frees”! Gluten free, dairy free, refined sugar free! And scrumptious!
Mixed Seeds and Lupin Crackers
Makes approx. 12
2 tbsp chia seeds
1 tbsp pumpkin seeds
1 tbsp sunflower seeds
1 tbsp sesame seeds
1 tbsp raw buckwheat
1 tbsp lupin flake (or kibble)
1 tsp fennel seeds (or cumin)
4 tbsp water
generous pinch of salt flakes
- Preheat the oven to 180 degrees celsius.
- Line a slice tray with baking paper.
- Mix all ingredients together in a bowl excluding the salt flakes.
- Allow to sit for 30 minutes. The chia seeds and water act as a binder.
- Spread the mixture over the tray and flatten out. It should be no thicker than half a centimetre.
- Sprinkle salt flakes on top.
- Bake for 25 minutes.
- Remove from oven and allow to rest for 5 minutes.
- Reduce oven to 150 degrees celsius.
- Place on chopping board and slice the crackers into desired size (can be triangles, square, rectangle).
- Bake for a further 15 minutes.
- Allow to cool on baking tray.
