Okay – what is kibble and what do you do with it?
I never actually knew what kibble was. Effectively, it’s just some type of food that is chopped-up coarsely. In this case, lupins.
Good to know. Still, what do you do with it?
Well, as I was thinking where this kibble would land me, I was eating it by the handful – it has a really hard crunch. I read on the packet that it can be a replacement for rice. So with broccoli and beetroot in my kitchen garden, I thought a winter salad would be right up my alley. And boy was I happy – this one turned out brilliantly first go!
I did what I always do to my roasted beetroot – peeled and dice the beetroot, wrap it in some foil with olive oil and cinnamon and whack it in the oven for 30-40 minutes. You basically roast it until your house starts to smell like beetroot and the time will vary depending on the size you’ve diced it. Then I walked away for about 25 minutes because everything else was so easy!
25 minutes later: I boiled some water and, once boiled, I added half a cup of kibble. This boiled for four minutes before I checked it. And it was perfect (for me): a little bit of crunch, not mushy.
I did what I always do to my broccoli – cut it into florets, dump it into a microwavable container with a tiny bit of water (1-2 tablespoons) and put it on high for one minute. Now, if you like your broccoli a little more cooked, just cook it for longer. Drain the water.
Next, my trusty, iron-filled handful of baby spinach leaves went on the plate first. I sprinkled the kibble over the baby spinach and placed the broccoli and beetroot on top. This was scattered with some goat’s cheese and raw (or roasted) hazelnuts. Now the flavour of the roasted beetroot is so strong and sweet, that I didn’t want to overpower it with a dressing, so I just finished it off with a drizzle of olive oil.
It was delicious and nutritious! And, the lupin kept me full all night – I am STILL getting up to feed twice at night so I really notice when I’m hungry.
Cinnamon-Roasted Beetroot and Kibble Salad
Serves 2
1 large beetroot, peeled and diced (1.5cm cubes)
1 tsp cinnamon
1 tbsp olive oil
8 broccoli florets, halved
½ cup lupin kibble
approx 30g goat’s cheese.
2 tbsp hazelnuts
olive oil to drizzle
Pre-heat oven at 180 degrees celsius.
Peel and dice the beetroot and wrap in foil with cinnamon and olive oil. Bake for 40 minutes.
Steam broccoli in microwave with 2 tbsp of water for 1 minute on high.
Bring 2 cups of water to the boil and add ½ cup of kibble. Cook for 3 minutes, drain excess water.
Add baby spinach to serving plates.
Top with kibble.
Top with broccoli and beetroot.
Top with goat’s cheese and hazelnuts.
Drizzle with olive oil.
