An enormous thank you is in order to my darling cousin, who has since coined the term “just like hundreds and thousands”. I received a video of him eating ice-cream with passionfruit, and as he generously sprinkled lupin crumbs on his ice-cream, he gave a cheeky smile and said the phrase. And thus, “just like hundreds and thousands” was born.
I must add, this darling cousin is 28.
But it got me thinking about my darling daughter, this beautiful spring weather we are having and how I’m going to keep sugar-filled ice-cream away from her this summer. So, here’s my thought – Berry Icy-Poles, with a natural (as in no added-sugar) yoghurt base. From this, I knew lupins were going to come into play. Yoghurt and fruit is a great snack by itself, but it just doesn’t keep her full for long enough. So, my next thought – Lupin Berry Icy-Poles. The protein in the lupins will fill her up, and it being low-GI, will keep her fuller for longer. Winning!
I am really lucky, getting her to eat something new is not that much of a challenge. I have said before, she has a SEE-food diet – she sees food, she eats it! It’s that simple! (Except broccoli, she still hasn’t come at that one yet). But I knew I would have to make the natural yoghurt (or greek yoghurt) sweeter. She will eat a little bit of it by itself, but not much. Usually I put some pureed fruit with it, which gives it a sweeter taste. But I decided to use rice malt syrup. I had frozen blueberries and raspberries in the freezer and lupin kibble in pantry – use what you have available to you!
I mixed some rice malt syrup with the yoghurt, threw in some kibble and added some frozen blueberries and raspberries. I figured out that 50grams of yogurt, combined with a teaspoon of rice malt syrup and lupin kibble, gives you a really nice base for one individual icy-pole. Then just add your fruit. It was so simple and so quick – and definitely something you could do with the kids – lets be honest, sometimes it’s easier to let them have some fun and make a mess rather than have them wrapped around your ankles whining.
They were an absolute hit! And will definitely be a staple this summer!
Lupin Berry Icy-Poles
Makes 6
Need icy-pole moulds
300g natural (or greek) yoghurt
2 tbsp rice malt syrup (more or less if desired)
2 tbsp lupin kibble
1/3 cup frozen or fresh raspberries
1/3 cup frozen of fresh blueberries
Combine yoghurt, rice malt syrup and lupin kibble (whisk works well).
Fold in berries.
Spoon mixture into icy-pole moulds.
Freeze for at least 4 hours (or until set).
